2017 Domaine Taupenot-Merme Chambolle-Musigny, Burgundy, FRANCE. 750ml
The family organically farms 0.86Ha of village-designated vines spread over three parcels in the Les Bussières and La Taupe climats, with an average age of 45 years. The wine spends three weeks in total on skins in temperature-controlled stainless-steel vats. The grapes are destemmed before a five- to six-day pre-ferment cold soak at 10°C, to extract fruit and colour. This is followed by fermentation maceration for 7 to 9 days. The wine is aged for 14-16 months in oak barrels (about 20% new).
