2022 Ravensworth 'Hilltops' Nebbiolo. Hilltops-NSW. 750ml
A varietal, perfumed and structured Nebbiolo from Brian Martin. Whole berry ferments, in wooden vats, spend eight months on skins. Then pressed out and into Stockinger, large format oak for 14 months.
TASTING NOTES
Distinctly floral, layered with red fruit and a slight gamey twist. Quite rich palate with a long, fine tannic finish. Early days yet as these wines tend to show themselves over a long time.
FOOD
Are you kidding, Nebb’s are like food mecca for dishes involving game and savoury, umami rich food. Slow cooked hare, truffle infused pasta, roasted cauliflower with a black garlic sauce. Wild mushroom risotto with a splash of the wine in the rice. Think rustic, full flavoured gamey dishes and partner up with a Nebb.
