2025 Blood Moon Wines 'Dream' Pinot Noir - CENTRAL VIC. 750ML
Vineyard - Dash Farms in Faraday near Bendigo. A cool, sheltered valley where fruit ripens at a measured pace.
Winemaking - Harvested 4 April. 20% of the fruit was placed in the bottom of the fermenters, the rest gently destemmed over the top. There was no plunging, just cap rolling. Wild yeasts were allowed to complete the fermentation, maceration was 10 days. Pressed to predominantly older neutral French oak barrels, with a couple of second and third fill barrels in the mix. Maturation was 9 months. 50/50 MV6 and D5V12 clones, co-fermented. No additions apart from sulphur, no fining or filtration. Vegan friendly.
