"From Zibbibo vines up to 50 years old, the spends 3 months on skins in amphorae and is unlike anything else we have tried, with a beguiling nose you cannot pin down. Surprisingly for a wine with this spectrum of aromas, it is detailed and long, with edges, length and grip.
The property was converted to organic then biodynamic principles, with all vineyard practices performed by hand. He made the bold decision to vinify in clay amphorae - some of which are over 400 years old - buried outside in the same soils the fruit comes from, with all wine spending time macerating on skins. The wines are completely unfined and unfiltered, and have no sulphites added at any point.
