A departure from Jura to produce gamay and one of Ganevat’s most sought after ‘alt-labels’. Gamay, s from Fleurie, some Pinot from Alsace annd then some Jura varieties. Fermented in a tronconic wooden vat , semi-carbonic macération at 12/14° (This involves whole bunches, partially crushed) with natural yeasts – no punchdowns or pumpovers – not filtered and nothing added. - Andrew Guard, Importer
