Two labels came out: first the Coenobium and since 2008, on the advice of Bea, also the Ruscum, the same grapes but with maceration on the skins.
Both wines have incredible sapidity and energy that comes from the magmatic composition of the soils. A third wine called Benedic from red grapes is also made but as for the very low production rarely you see it outside the monastery.
While harvest is done by the all community, 5 or 6 nuns take care of the vineyard all year round, treating it only with sulfur and copper and keeping a permanent grassing between the plants, leaving the clippings on the ground.
In the cellar, on the other hand, there are Suor Adriana and Suor Marta left in charge. They ferment with only naturally occurring yeasts and follow organic wine-making practices. The “winery” is nothing more than a toolshed with old steel tanks, fiberglass containers of various sizes.
