2021 Olek Bondonio N21, Barbaresco-ITALY 750ml
Organic, Practicing Biodynamic. 70% Nebbiolo, 15% Barbera, the rest is roughly equal parts Pelaverga and Dolcetto. Drawn from parcels of Bondonio’s youngest vines; all estate fruit. Stainless steel ferments; all varieties vinified separately. When fermentations completed on each tank, Bondonio pressed each wine off in his basket press, then blended each tank together. Unfined, unfiltered, with moderate amounts of SO2 (10-20ppm max) added just before bottling.
