2022 Domaine de la Touraize 'la Cabane' Ploussard - Arbois, Jura, FRANCE. 750ml
Ploussard from lieux-dits La Touraize and Curoulet. The vines are 30-50 years old and grow on grey marl. The grapes are de-stemmed carefully by hand, and then placed in a tank and filled with CO2. Macerated for 10 days, wetting the cap every 2-3 days, but without punching down. The grapes are pressed and the juice is blended with the free run wine. After malo in tank, the wine is transferred to old foudre, where it ages for 7 months. Not fined or filtered. Minimal SO2 added before bottling. 12.5% alc
