This 1.1 hectare vineyard has been farmed with biodynamic principles since 2013. The vines range from 50-75 years and are planted on sandy grantic soil with a pink vein. Elevage in a mix of old barriques and Demi-muds of at least 5+ years of age followed by 11 months aging in bottle prior to release. Cuvee du Chaos this year is Supreme Chaos. Supreme is classified for exceptional years, often they are those also marked with occasion, and in 2020 it was the birth of Yann’s daughter Olivia during harvest. Sophisticated nose, red fruits and florals. An elegant silken palate. The framework supports red fruits with sappy fluidity and structure. Fine tannins yet with tightness, pops of fruit pulsate. Opens into a sweeter fruit profile, more cherries and minerality.Notes from barrel March 2022 - Freshness, ethereal, fluid and fine. Florals and young strawberries.
