2018 Crawford River Cabernet Sauvignon, Henty, VIC. 750ml
Lovely black, lifted fruits and underlying earthy tones define the introduction to this wine. The palate is plush, supple and dense. There is spice – think liquorice and allspice – with blackcurrant, dark chocolate and a hint of bay. The fine, powdery tannins and seamlessly integrated acidity help define and elongate this superb example of Crawford River Cabernet.
100% hand-picked fruit is carefully selected in the vineyard. At the winery, it is destemmed without crushing and the fruit is cold soaked for 5-7 on skins prior to natural fermentation in open fermenters. Each fermentation is hand plunged throughout a moderate temperature fermentation. It is then pressed when dry and settled in tank for around 4 weeks before barrelling down. 24 months in 100% French Oak, 20% new. No acid addition. Not cold stabilised. Not fined. Bottled October 2020.
