2022 Phase Three "Dero" Shiraz - Barossa Valley SA. 750ml.
Various old vine plots in the Barossa and Eden, various baume, and then all long slow whole cluster ferments, with a small parcel that was open fermented as well. The wine was then filled to French oak barriques to rest in a cool cellar for 17 months and blended towards th end of winter 2022 with only a small addition of sulphur. There's a barrique of pinot in here, as well as a barrique of the 2020 iteration of the wine!
