Made by Japanese ex-patriots Yoshiaki and Kyoko Sato at the foot of Mount Pisa. Vineyards managed organically, natural yeast fermentation. No commercial enzymes or additives used except for trace sulphur before bottling.
“The aromas and flavors are marked with dried-strawberry, nutmeg, bark and mushroom character. Tar too. This is structured, showing fine tannins that give a beautiful mouthfeel and tension.
