Made by Japanese ex-patriots Yoshiaki and Kyoko Sato at the foot of Mount Pisa. Vineyards managed organically, natural yeast fermentation. Alluvial sandy loam with river gravels. Whole bunch press, aged in oak for 12 months. No fining or filtration.
