2020 Domaine Servin 'Montée de Tonnerre' 1er, CHABLIS, FRANCE. 750ml
The Servin family has owned vines in Chablis since 1570, but their roots go even further. Since 1998, the estate has been managed by François, a fervent believer in the ageing capacity of Chablis. His understanding of his old vintages convinced him that malolactic fermentation and late bottling increases the ageing capacity of his wines. The aim is to bring out the real character of each plot.
Tasting note: Here the expressive nose is at once much more floral but also more elegant with its airy aromas of cool citrus, quinine, tidal pool and oyster shell hints. There is a lovely sense of restraint to the palate etching middle weight flavors that are shaped by citrus-tinged acidity on the balanced, bone-dry and lingering finale. This classy effort is very MdT in style.
