2020 Domaine Servin 'Vaucoupin' Premier Cru Chablis. Chablis, Burgundy FRANCE. 750ml
The Servin family has owned vines in Chablis since 1570, but their roots go even further. Since 1998, the estate has been managed by François, a fervent believer in the ageing capacity of Chablis. His understanding of his old vintages convinced him that malolactic fermentation and late bottling increases the ageing capacity of his wines. The aim is to bring out the real character of each plot.
Tasting note: There is a vague whiff of the exotic lurking in the background of the aromas of white peach, honeysuckle and quinine. The middle weight flavors aren't quite as concentrated though they are perceptibly finer with a fine bead of minerality adding a sense of lift to the borderline salty, clean and nicely long finish....
