2022 Domaine Servin 'les Pargues' - CHABLIS, FRANCE. 750ml
The Servin family has owned vines in Chablis since 1570, but their roots go even further. Since 1998, the estate has been managed by François, a fervent believer in the ageing capacity of Chablis. His understanding of his old vintages convinced him that malolactic fermentation and late bottling increases the ageing capacity of his wines. The aim is to bring out the real character of each plot.

There is excellent Chablis typicity on the nose of mineral reduction, tidal pool, apple and pretty floral whiffs. There is both better volume as well as slightly better verve as well on the palate of the utterly delicious middleweight flavors that flash evident minerality on the youthfully austere, balanced and solidly long finale. This is potentially excellent and virtually always a great value plus it should age effortlessly. (89-91) Allen Meadows
