60% Minella/40% other. Eduardo harvests this field blend from 6 different Etna sites on the north face or versante nord of Mt. Etna at elevations ranging from 550 to 900 meters. A majority is made up of rare native white Minella; the rest included other local varieties Catarratto, Carricante, Coda di Volpe, Grecanico and Inzolia. Grown on soils rich in volcanic ash, the vines average 45-50 years in age; they are hand-tended, without chemicals or fertilizers, and hand-harvested. The juice is fermented spontaneously in concrete tank and macerates with the skins for 5 days with no temperature control.The wine is aged for 8 months in used oak botti.
