2021 Hochkirch Syrah. Tarrington-Henty-VIC. 750ml
Certified Biodynamic winery making elegant Syrah from dry-grown vines in Western Victoria. The cool conditions of 2021 were ideal for creating the Hochkirch Syrah style. The fruit was hand-harvested from 10- to 30-year-old vines on basalt, gravel and loam soils. 75% of the fruit was destemmed to small, open fermenters with the remaining 25% processed as whole bunches. After 21 days (and some human pigeage), the fruit was sent to small, old French oak where it went through malo. It was then racked to barrel for approximately 14 months. No additions.
